Our organic whole wheat pastry flour is made from White Sonora wheat berries. It is a soft white spring wheat. It is milled in a proprietary Unifine high-velocity impact milling system, producing a super-fine, highly nutritious, 100% whole grain, single-source pastry flour. This whole wheat pastry flour has a lower protein percentage so it isn’t used for bread baking, but can be used to make other non-yeasted baked goods. Use our organic pastry flour in whole wheat muffins, cookies, pancakes, brownies, tortillas, biscuits, pies for added nutrition and flavor.
